Feta, Turkey, Thyme and Olive muffins – Gluten free or not!

What is better than a muffin? a Savoury muffin that is!

For something deliciously different try this Turkey, feta, Thyme and olive muffins.

The combination is just fantastic and  you can have it gluten free as well!

If you can’t be bothered by gluten please refer to our basic recipes. Also see the  3 great variations that can be added to the basic muffin mixture.

Basic muffin recipe – gluten-free

500 ml Gluten free self-raising flour

5 ml Salt

1 Large egg

225 ml low-fat Milk

Pre-heat oven to 190 degrees Celsius.

Spray a silicone muffin pan or use paper muffin cups placed in a muffin pan.

Sift self-raising flour and salt.  Add any of the variations to the flour. Beat the egg with the milk and to the flour.

Mix with a flat bladed knife until mixture forms a soft dough.

Spoon unto muffin tin/cups (3/4 full).

Bake for +- 15 -20 minutes until golden brown and done on the inside.

Tips

Variations 

Turkey, feta, Thyme and olive. 

125 g Turkey Rashers / Bacon

1/2 onion diced

10 ml fresh thyme leaves ( + extra thyme leaves to place on top of each muffin before baking)

50 g pitted a olives (chopped)

1 wheel of feta cheese.

Fry the onion and Turkey rashers until crispy, let it cool down. Add the olives and crumble feta into the mixture. Add to basic muffin mix.

Parmesan, sage and onion

Grate 100 g fresh Parmesan cheese and divide into half. Add 10 ml chopped fresh sage leaves and 1/2 bunch of spring onions to one half of the cheese. Add to the basic muffin mixture. Brush the muffins with a little beaten egg and sprinkle the other half of the Parmesan cheese on top of the muffins. Add a sage leave on each muffin before baking.

Cheddar, onion and rosemary

sate’ 1 onion and 1 chopped garlic glove until translucent and soft, allow to cool. add 100 g grated cheddar cheese and 10 ml chopped fresh rosemary leaves. Add to basic muffin mixture. Place a small twig of Rosemary on top of each muffin before baking.
