LCHF – Minced Beef Curry and Cauliflower rice


Interesting low carb meals that is plated beautifully is great and all,  but sometimes you just need a quick, easy and cheap meal to end the day with.

Who really still have time on weekdays to cook to your heart’s content? I don’t know about you but nine out of the ten times I just need an easy, healthy and balanced meal to feed the family with.

A traditional Minced beef curry and rice is probably one of my favorite carb loaded meals I dearly miss, the type with potato cubes in the curry beef, topped with a dollop of Mrs. Balls chutney, sliced bananas and a little coconut on top! I know, when you say it out loud it sounds even weirder then the description given,  it is delicious though!

This minced beef curry and Cauliflower rice is the low carb copy cat version and kindly hits the spot when the craving for curry and rice is high!  Most shops do sell cauliflower rice these days that is an absolute time saver, but if you need to make your own just grab your hand grater. I’ve learned a long time ago that this prehistoric kitchen tool is still much quicker then assembling your food processor for the task at hand.



Serves 4 

Each portion of Curry equals to 6 g Net Carbs excluding the cauliflower rice. 


1 Onion (chopped)

1 tsp Minced garlic

1 Tbsp butter or ghee

1 tsp Ginger, ground

1 tsp Garam masala

1/2 tsp Turmeric, ground

1 tsp Jeera and Dhania powder

450 g Minced beef

2 Medium Carrots, peeled and cubed

100 g Green beans diced

2 tsp Xylitol

1/2 cup of Tomato passata sauce  OR  4 tomatoes liquidized

2 Tbsp Greek yogurt



Heat the spices gently in a heavy saucepan. Add the butter or ghee with the onions and fry until translucent.

Add the garlic and fry for a minute. Add the Minced beef, carrots and beans and fry until the meat is cooked trough.

Add enough water to cover the meat and cook until the veggies are done and the liquid is reduced to half.

Add the tomato passata sauce and Xylitol and cook for +- 5 minutes. (Add a little water if needed, the consistancy should be that of a light gravy) Reduce the heat to a gentle simmer and stir in the yogurt. Serve warm with cauliflower rice.
