Eat light tonight! Low Carb open Chicken Greek burgers with Tzatziki

Greek open burgers (17)

Fresh crispy salad, Tangy cool Tzatziki, creamy Feta and a chicken burger patty that sings summer, what’s not to like! The perfect light meal on a hot summer’s night.

…..and haven’t it been hot and humid this last few days?

This is certainly one of those family dishes where everyone can get involved, allow the kids to place the salad vegetables on the plate while you grill the chicken patties.

The Tzatziki, a tangy Mediterranean yogurt and cucumber sauce, goes extremely well with the juicy chicken patties.

Tzatziki  is much more flavourful  prepared a day in advance, but if you don’t have enough time on hand prepare your Tzatziki first and let it chill in the fridge while you get going on the dinner.

Tzatziki Sauce

1/2 cucumber, peeled seeded, finely grated and strained.

2 Garlic gloves minced

1 Cup Greek yogurt

1 tsp Lemon zest

1 Tbsp Fresh Lemon Juice

2 Tbsp Fresh chopped dill (or 1 Tbsp dry dill)

+- 5 mint leaves finely chopped (optional)

Freshly ground black pepper and salt for seasoning

Mix all your ingredients together and let it chill in the fridge.

Use any left over Tzatziki sauce within 2 days.

Chicken Patties

600 g Chicken breast (No skin, no bones)

5 ml Salt

a handful of chopped spring onions

1 / 4 cup oatbran *see tips

1 egg white

1 small onion finely chopped

a dash of white pepper

Use a food processor for the chicken patties.

Cut your chicken breasts in smaller chunks and mince it up in a food processor.

Transfer the meat to a large bowl and mix in the rest of the ingredients.

Your meat mixture is a sticky story so make sure you have a bowl of clean water next to you to dip your hands in. Wet your hands and form golf ball size chicken meatballs. Shape into patties and rest on a layer of cling wrap or a  silicon mat.

Heat a little olive oil in a frying pan and fry your patties on both sides until golden brown and cooked through.

Complete the meal ….

1 x head of Lettuce of your choice

2 – 3 Ripe tomatoes sliced

+- 4-6 Olives of your choice per person

Sliced cucumber

Feta Cheese chunks

Place all your vegetables on your place, add your chicken patties, feta cheese and olives and dress it up with some Tzatziki sauce.

Tips

________________________________________________________________

*No need to buy oatbran! Whiz up rolled oats in your food processor for a minute or two and store in an airtight container. Replace your breadcrumbs in your Meatloaf, Meatballs or Bobotie with oatbran as a healthy alternative.

*LCHF, Banting, keto or Paleo diet? No need for the oatbran but do ommit the egg white from the recipes or else you will sit with a sticky meat mixture.

Tzatziki goes well with any meat! Add it as a spread for pita breads, a tangy dip for raw veggie sticks or simply as a salad dressing.
