Cucumbers are very low in calories and it contains no saturated fats or cholesterol. White rice vinegar on the other hand has its own list of unique health benefits including regulating blood sugar levels.
1 large cucumber
45 ml Rice vinegar
Salt and white pepper to taste
1 sachet sugar substitute (or 10 ml castor sugar)
coarsely grate the cucumber in a bowl.
Combine the rest of the ingredients and pour over the cucumbers giving it a quick mix.
Chill in the fridge until ready to serve.
