Peanut butter and celery, on their own not so good, together, absolutely great!
“Ants on a log” a popular childhood snack known as peanut butter on celery stalks with raisins on top, was recommended as a healthy snack by the McKinley Health Center at the University of Illinois in the 1950’s, only discovered by myself somewhere in the late 2000’s, still harbouring some feelings of being cheated out of something I never knew existed….
My favourite version is the “Ants on vacation” which is without the raisins.
Pack it in a plastic jar and you have a great healthy snack on hand. Perfect for the little ones to enjoy while you travel and even better for you as a “pick me up snack” late in the afternoons before those unscheduled meetings and deadlines at the office.
Celery has a high content of fibre and one stalk has less than 10 calories. Peanut butter is a great source of protein and good fats. Both celery and peanut butter have qualities to encourage feelings of satiety, thus a great snack if you are watching your weight.
Your jars should not be too tall especially if you pack them for younger children, the idea is NOT to get their hands sticky with peanut butter especially if it serves it as a travelling snack in your car.
Simply fill a plastic jar with a few tablespoons of peanut butter on the bottom. Cut celery stalks a little shorter than the jar size and stick them into the peanut butter, voila! snack on the go.
